Charcoal Burger Buns recipe

I’m back with a charcoal burger bun recipe!

They look gorgeous don’t they?

I paired them off with lettuce, pan-fried chicken patties and tomato slices. I’m not that satisfied with the taste of the chicken patties so I’ll probably work on it and share the recipe next time.

Today’s main lead is the charcoal bun!

And here’s the recipe!

Charcoal Hamburger Buns Yields 6
  • 1/2 cup milk
  • Scant 1/4 cup water
  • 1/2 Tbsp honey
  • 113 gm butter
  • 1/2 egg (approx 25 gm) and slightly more for eggwash (optional)
  • 2 1/4 cup bread flour (take out 5gm or 1 tsp flour, replace with same amount of charcoal powder- I bought it at Phoon Huat)
  • 1 1/8 teaspoon instant yeast
  • 1/2 tsp salt
  • Toppings: Small amt of black seasame seeds
  • 1. In a small saucepan, heat the milk, water, honey and butter over low heat until butter is melted. Let cool. Beat the egg into the mixture.
  • 2. In a stand mixer bowl, add flour with charcoal powder, yeast, salt and half of the all-purpose flour. Pour in milk mixture and beat well. Continue adding flour until dough pulls away from the bowl and is no longer sticky. Knead for about 5 minutes in the stand mixer.
  • 3. Divide dough into 6 pieces, shape each into a ball, pressing down slightly and place on a parchment-lined baking sheet.
  • 4. Cover loosely with plastic wrap and let rise in a warm-ish place for 30-40 minutes or until buns have doubled in size. Optional: Brush on the eggwash and sprinkle some sugar and rolled oats/sesame seeds as toppings.
  • 5. Bake in a preheated oven at 200°C for 10-12 minutes or until lightly browned.
